Cauliflower Crust Pizza

Pizza that is Gluten Free, chock full of veggies and tastes Amazing!!

Pizza anyone? My family loves pizza and over the years I have continuously made changes to make it healthier and healthier. Adding veggies, chicken instead of pepperoni, thinner crusts….we all know the drill. My personal tastes for pizza have changed and I only want the crazy thin and healthiest versions possible but my kids still love the old school pepperoni and sausage. So I set out to find something they would enjoy that would be healthy.

Guess what? It worked-they had no idea it was cauliflower crust pizza and they devoured it and asked for more!! This momma gave herself a pat on the back.

There are many different versions to this recipe but I think I came up with a combo that is easy and flavorful!

Cauliflower Crust riced

You will start by “ricing” the cauliflower either in a food processor or you can cheat like me and buy it already  riced LOL. Although I do tend to rice it even more when I do buy the bagged version. I admit that it’s so much easier than getting small bits of the veggie all over the counter 🙂

After it has been riced you will want to heat it in the microwave for just a few short minutes to soften the veggie and then drain the water and extra moisture the best you can with a towel, cheese cloth or simply several papertowels. The better you drain it the dryer and crispier the crust will turn out.

Combine your ingredients. Make into to balls and flatten to desired thickness. I like mine thin and I also like to add extra seasoning. Italian seasonings are incredibly good with this recipe!!! I highly recommend adding more.

Ingredients
Instructions
  1. To "rice" your cauliflower you simply need to pulse in a food processor until it's in small pieces like rice. You can also use a grater or blender/nutribullet type of machine but be careful not the puree the mixture.
  2. Preheat oven 450.
  3. Cook cauliflower in microwave for about 5 minutes. Keep an eye on it as you don't want it to burn just lightly cooked through and a bit dried out. Combine all ingredients together and make 2 equal sized balls, place on greased pan or parchment paper and pat into flat patties. I like mine thin.
  4. Bake for about 15-20 minutes until it's beginning to crisp up and brown.
  5. Add desired sauce and toppings and bake for another 10-15 min until it reaches desired crispiness and the cheese is melted. Enjoy:-)
Recipe Notes

NOTES: To make it EXTRA amazing and flavorful add more italian seasoning. OH NOM NOM so good!! Also work great making multiple batches for food prep. Freeze individual crusts after they are cooked between sheets of parchment, freeze in a baggie and toast up and use as needed.

I love to pre-make by tripling the batch so I can freeze them. I pre-cook them and and place them between parchment before bagging and freezing. Works like a charm.

Something else that is amazing is that its crazy good with so many things. I toasted up my crust for a breakfast pizza with avocado and eggs and it was seriously A-MAZE-ZING!!!
