Banana Bread Obsession

OK so WARNING – this isn’t exactly a healthy recipe and it can be made GF by using GF all purpose flour as well. Slightly different consistency but still really tasty and of course better for us…..I CAN’T be responsible for addiction – Just giving you that heads up right now LOL

Banana Bread with Crumble Topping

This recipe is rather easy to make and it’s INSANELY good. My daughter loves making it and usually can do it with minimal help. So just a few things….Be sure to butter and flour your pan to prevent stickingBanana Bread

For the bananas a little trick we use is to use a potato masher to mash them up – Brilliant right? LOL

Banana Bread Mashed Bananas

So a hint when adding the wet ingredients….Do the oil first and use a 1/4 cup instead. It calls for 1/2 cup so obviously just do 2 of those and THEN do the honey. As you can see in the picture the oil lets the honey come right out without sticking – WOOT WOOT! Amazing trick!

Banana Bread Hints

Ok here you are….Prepare to fall in love with this baby 🙂

  • Banana Bread1.5 Cups all purpose flour (GF for those who need)
  • 1 Cup Sugar
  • 1.5 tsp ground cinn
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2-3 sm-med mashed ripe bananas (about 1 cup)
  • 2 eggs
  • 1/2 cup evoo or avocado oil
  • 1/4 cup honey
  • 2 TBSP -1/2 Cup water (based on consistency)

Banana Bread Topping

  • 2 TBSP sugar
  • 1.5 tsp ground cinnamon
  • 2.5 TBSP brown sugar

  1. You will need 2 bowls
  2. Preheat oven at 350
  3. Butter and flour a bread pan to prevent sticking
  4. Combine first 5 dry ingredients in 1 bowl and whisk well to thoroughly combine
  5. Combine next 5 wet ingredients in bowl 2 starting with 2 TBSP water and adding as needed for consistency. How much you have in bananas causes this to adjust a tad. HINT. use 1/4 to measure the oil first then use that same 1/4 2 times for the honey – doing the oil first prevents the honey from sticking to the cup….your welcome 🙂
  6. Add dry ingredients to wet slowing and stir to combine well
  7. Pour mix into 9×5 bread prepared pan
  8. in a small bowl combine 3 ingredients for crumble and mix well
  9. pour over top of the batter evenly – I tend to pat it down jsut a little too, to make sure it sticks well while baking
  10. bake for about 1 hour – most often it’s a little more. When a toothpick comes out clean it’s ready.
  11. Let cool about 30 min
  12. slide bread out on it’s side carefully and allow to finish cooling completely before cutting

Final step – reach out to me when you eat too much so I can help you burn off the extra calories  😀  😀  😀
